Kitchen Adventures: Chicken, Snow Pea and Cashew Fried Rice
This is, by far, my favorite recipe so far. It was delicious and savory, not at all bland, and cooking the rice with all the fixins infused it with a great flavor. I loved that I could do it all in my electric wok, which sadly doesn’t see a lot of use.
I made a few modifications:
I substituted snow peas with sugar snap peas. (Mostly because I somehow got it in my head that that was what we needed.)
A tube of Gourmet Garden’s Ginger, a handy replacement for fresh ginger that will hopefully last a little longer. It tasted delicious so I don’t think any flavor was lost.
I didn’t read the whole recipe so, instead of soaking the chicken in 2 tbsp of the teriyaki sauce, I was dropping each of the new slices into the full 1/4 cup of sauce to marinate as I was cutting. It didn’t wind up oversaturating the flavor though and I’d probably do it again.
I think as long as you have the basic ingredients —- chicken, snow peas, teriyaki sauce, garlic, ginger, broth, vegetable oil and rice —- you can make this anytime and quite easily.
